Cacao and raspberry bites
Makes approx. 20
* Can be gluten-free if using gluten-free oats
100g oats or oat flour
50g chopped apricots
1 tbsp cacao or cocoa powder
1 tbsp cacao nibs
1 tbsp desiccated coconut, unsweetened
2 tsp coconut oil, melted
1 ½ tbsp water
1 tsp raspberry powder
1 tsp maca powder (optional)
If using oats use the dry foods option in your blender until it is a flour.
In a food processor bowl add the oat flour, chopped apricots and sultanas and process until smooth.
Add the cacao powder, raspberry powder, maca powder, coconut oil and water and mix until a smooth dough is formed. You may need to add a drop more water if the mixture is a bit dry and crumbly, but only add a drop at a time.
Taking a small handful at a time roll in to small balls., pressing the mixture together.
Store in an airtight container in the fridge or freezer.
You could use any dried fruit here. The raspberry powder adds a really zing to the flavour but you could use a flavouring of your choice instead. Raspberry powder can be found online.
